My Sustainable Story
Hi everyone, my name is Ashley and I am the founder of Scout Eats. My mission is to provide others with basic information and tips/tricks on how to live more sustainably. I want to give people ideas on how to lead a plant-based lifestyle and also how to go zero waste by providing you with what has helped me in my day-to-day life.
The name ‘Scout Eats’ was something that came to me pretty naturally. My dad gave me the nickname of Scout when I was a little girl. He said I reminded him of the girl named Scout in To Kill A Mockingbird. I suppose it was because I was also very curious and feisty like her.
This curiosity and drive to “know” things has truly served me well in my life so far.
I am always seeking new information and truly want to provide others with the knowledge that I acquire so that they, too, can learn from these things.
I have a Bachelor’s in Nutrition & Food Science with an emphasis in Dietetics. Although this degree provided me with a whole plethora of knowledge in the food world, including the clinical aspect of it, I realized that I needed to do some further digging.
Because of my passion for health and nutrition, doing my own research on food (outside of my university) came pretty easy to me.
I read various books, watched numerous documentaries, and eventually… I decided that I needed to make a lifestyle change. At first, I simply just added more whole plant-foods into my diet, but by the middle of my college career, I was eating entirely plant-based, and haven’t stopped since.
This propelled me into my sustainability journey and made me more aware of the effects I was having on the environment.
Fast forward a few months after graduating, and I was soon immersing myself in another part of the sustainability world- working as a Zero Waste Program Coordinator for another college campus.
This job solidified my belief in the connection between diet and environment and gave me the knowledge and tool set that I needed to really implement the sustainable lifestyle that I wanted to achieve.
A Journey, Not A Destination
I truly believe that living sustainably is a journey, not a destination. Some people tell me things like, “I would never be able to go completely zero waste, plant-based, etc.” And they continue on living the way they always have. My answer to them is, “That’s okay!” You don’t have to reach a destination when trying to be more sustainable.
All it takes is one small, meaningful change to start your sustainability journey and my hope is that I can help anyone on this path to living a more eco-friendly life.
Small Steps, Big Changes
1 small change x a lot of people = a big impact.
It is my hope that this site can offer others at least one way on how to lead a more sustainable lifestyle. Much of my content is going to center around various sustainability tips, with a focus on how to go zero waste and incorporate more plant foods into your diet.
However, there are many different ways to incorporate eco-friendly changes in your life, so find one that works best for you!
