Hey There!

My name is Ashley and I am the founder of Scout Eats. This site is dedicated to helping others lead a more sustainable life through plant-based recipes and zero waste lifestyle tips!

I am a recent graduate with a degree in Nutrition & Food Science and have spent the past year working as a Zero Waste Program Coordinator. These two things have melded into one big passion of mine: leading a sustainable lifestyle through a plant-rich diet and developing zero waste lifestyle habits.

Although my college degree provided me with a whole plethora of knowledge in the food world, including the clinical aspect of it, I realized that I needed to do some further digging.

Because of my passion for health and nutrition, doing my own research on food (outside of my university) came pretty easy to me.

I read various books, watched numerous documentaries, and eventually… I decided that I needed to make a lifestyle change. At first, I simply just added more whole plant-foods into my diet, but by the middle of my college career, I was eating entirely plant-based.

This propelled me into my sustainability journey and made me more aware of the effects I was having on the environment.

Fast forward a few months after graduating, and I was soon immersing myself in another part of the sustainability world- working as a Zero Waste Program Coordinator for another college campus.

This job solidified my belief in the connection between diet and environment and gave me the knowledge and tool set that I needed to really implement the sustainable lifestyle that I wanted to achieve.

A Journey, Not A Destination

I truly believe that living sustainably is a journey, not a destination. Some people tell me things like, “I would never be able to go completely zero waste, plant-based, etc.” And they continue on living the way they always have. My answer to them is, “That’s okay!” You don’t have to reach a destination when trying to be more sustainable. It’s all about the journey and making small, consistent changes throughout your life (which I guess is pretty true about anything in life).

1 small change x a lot of people =  a big impact.

It is my hope that this site can offer others at least one way on how to lead a more sustainable lifestyle. Much of my content is centered around zero waste swaps and plant-based recipes, but there are many different ways to incorporate eco-friendly changes in your life, so find one that works best for you!

I am always open to new green living ideas, so if you have something you’d like to share, I would love to hear it.
