Hey all!

My name is Ashley and I am the founder of Scout Eats.

This site is dedicated to providing others with ways to live more sustainably, specifically through plant-based recipes and zero waste lifestyle tips!

Where Did the Name ‘Scout’ Come From?

‘Scout’ is a nickname that my dad gave me as a little girl, since I reminded him of the character Scout from the movie and book, To Kill A Mockingbird.

Scout was feisty, curious, and always stood up for what she believed in. I felt that this name suited my business because I truly do stand up for what I believe in and feel a calling to share my message with others.

A Little Bit About Me…

The journey to my current lifestyle was like many others: filled with many twists and turns. Although I hold a Bachelor’s degree in Nutrition & Food Science (and truly do value the education I received), I realized that there was more to health than I was being made to believe.

After watching several documentaries and reading various books, I eventually adopted a plant-based diet. Once I realized that this way of eating was better for my body and the environment, I knew I couldn’t go back.

My senior year of college was a big one for me because I was on the path to becoming a registered dietitian. But after seeing all of the unhealthy food that patients were prescribed in hospitals, I realized that this path was not for me and I wanted to help others in a different way.

Since I was also passionate about sustainability, I took my first job out of college working as a zero waste program coordinator for another university. It was this experience that truly ignited my passion for sustainable living and eventually led me to start this blog where I combine my two passions for plant-based food and zero waste living!

Although I am fully plant-based, I am not 100% zero waste. And that’s okay. It is my intention to create an open and inviting atmosphere for others through this site, no matter where you’re at on your sustainability journey.

Whether that’s doing “Meatless Mondays”, walking instead of driving, or making plastic free swaps, it is all valid and significant. Every little bit counts and I truly believe that many small changes multiplied by many people equals massive change.

With that said, I truly do hope you enjoy the content I put out and feel inspired to make even one small change in your life.

I am very interested in cosmetics and I was wondering how you kept sustainable, as well well as vegan in your products and what you use. Do you have alternatives to wipes? What about your favorite brands? What is your sustainable must have for beauty? I would love to know more!

      Thank you so much! I’m so glad to hear you are interested in this topic 🙂

      I have a whole blog post on the topic of cosmetics listing 10 vegan and zero waste makeup brands as well as a recipe for homemade makeup remover 🙂 I currently use Elate products for my makeup and they work so well! I also swear by my makeup remover and use that solution over reusable rounds.

      One of my sustainable must-haves as far as beauty products (besides my makeup remover) would probably be jojoba oil! I love putting that on my face at night and it is non-comodogenic so it doesn’t clog up your pores like some oils. I hope that helps! Good luck on your sustainable journey x
